To achieve the natural flavor of Vyshnyak, we use cherries from the best orchard plots that have reached the required level of ripeness. The readiness of the cherries is determined through daily tastings. Cherries are carefully hand-picked, cooled to maintain freshness, and delivered to the production facility. In glass vats, the cherries begin fermenting with less sugar and an extended fermentation period of 3–5 months. When the wine reaches the desired sugar (sweetness) level, fermentation is stopped by rapid cooling to +1°C. This method ensures a bright, rich varietal aroma of fresh cherries while preserving their natural sweetness. The drink has a distinctive strength of 14%.
