The production of this drink uses a long fermentation method. The cherries ferment for more than 7 months in Italian glass vats, followed by cold treatment. The main ingredient in making vyshnyak is sugar — and it’s impossible to do without it. But what did winemakers do back then? Sugar already existed in India at the time, but in Europe it only appeared in commercial quantities in 1843 in the Czech Republic, and since then it has become a common part of our lives. However, Volodymyr needed the drink back in those times, and honey was the perfect solution. It was honey that remained the main ingredient in vyshnyak for more than 800 years.
